1.准备好所有食材,嫩豆腐切成小块;小番茄清洗干净对半切成4瓣;生姜清洗干净切成姜片备用;

2.腌制虾肉:新鲜的大虾清洗干净,去掉虾线、虾壳,取虾肉加入少许盐和料酒,充分抓拌均匀腌制二十分钟;

3.炒虾头、虾壳:起锅热油,油温7成热时,下入虾头、虾壳煸脆,用锅铲压碎虾头,释放出虾脑;

4.煸了三分钟之后,沿着锅边淋入适量料酒去腥增香,之后加入足量的清水,这里建议用开水;

5.加入切好的姜片,白胡椒粉适量,开大火煮沸,煮开后撇去多余浮沫,继续烧二十分钟;
6.提取高汤:时间到后,过滤掉汤汁中的虾壳虾脑,剩下的汤汁即为高汤,色泽还是很不错的;

7.将切好的嫩豆腐倒入高汤中,加入切好的小番茄块,依次加入生抽和白糖,搅拌均匀;

8.大火煮沸后,转中小火烧十五分钟,使嫩豆腐入味即可;

9.最后放入腌制好的虾肉,大火煮三分钟即可,出锅前淋入少量的水淀粉,可以增加粘稠度;

10.拌饭,单吃都是很不错,虾壳都不会浪费的一道美味家常菜~
五、小白菜
小白菜不像大白菜那样可以生吃,用小白菜制作菜肴时,炒或者煮的时间都不宜过长,以免损失小白菜的营养。小白菜富含蛋白质和维生素,其中钙的含量就比大白菜的含量高出两到三倍。小白菜的食用方法很多,清炒做汤都是不错的选择。

1.绿叶蔬菜用流水冲洗干净,我今天用的是鸡毛菜就不用切,如果是大颗的(大菠菜、娃娃菜),就需要改刀切小段;

2.豆腐切成小块,我用的是冻豆腐,解冻时间短,就随意掰碎了,口感也是意外的好,用内酯豆腐更好;
3.菌菇清洗干净切成小块,像杏鲍菇、蘑菇等切成片状,平菇、蟹味菇撕碎就可以了;

4.小半锅清水,将小鱼干冷水就放入,提鲜用地,让鲜味跟着开水一起慢慢释放,水开后煮5分钟以上;
5.最先倒入菌菇,继续炖煮5-10分钟;
